Brave Recipes: Founders' Favorites

As you might imagine, the five founders over here at Brave are seasoned Overnight Breakfast eaters. From idea to launch it took us almost two years of trial and error and god knows how many pounds of chia seeds consumed.

Sometimes we find that our Overnight Breakfast is best consumed on its own. Other times, though, we like to spice it up with extra toppings. We’ve tried everything from MCT Oil to yogurt to just about every nut butter currently known to man. Below you’ll find a few of our founder’s favorite toppings. Josh’s Toppings – Tropical Coconut:

Hailing from Chicago, IL Josh’s initial instinct was to throw yellow mustard, a kosher pickle, diced onions, a tomato, and a dash of celery salt on his breakfast and call it a day. After many weeks of deliberation, Josh finally agreed that a “Chicago Dog” flavored breakfast might not have the broad appeal we were looking for. Despite his early stumble Josh has come a long way. Here are his favorite toppings for the Tropical Coconut:

-       1 cup of Coconut Milk (added to mixture and left overnight)

-       2 TBS Cashew Butter

-       ¼ cup of fresh blueberries


Des’s Toppings – Mocha Chip:

If genetic predisposition to flavor preferences is a thing scientists’ study, they should look no further than Des and his 4 offspring. Peanut butter obsessed, all of them. Des, though, is the PB OG. In the 25 years I’ve known the man, he hasn’t let a single day has pass without eating at least one spoonful of peanut butter. As you might predict, you’ll find peanut butter in his favorite toppings for the Mocha Chip:

-       1 cup of Oat Milk (added to mixture and left overnight)

-       2 TBS Crunchy Peanut Butter (Des prefers Whole Foods 365 though he is currently subscribed to an artisan nut butter box and is prepared to update this preference if and when the right peanut butter graces his palette)

-       1 sliced banana

-     Des then warms the entire breakfast on the stove top or microwave when in a hurry

Alex’s Toppings – Mocha Chip

As Des’s middle son, you’ll notice the apple doesn’t fall too far from the tree – a healthy dollop of crunchy peanut butter is customary. But, like any good millennial, you’ll also notice Alex has included an ingredient his father cannot pronounce. Emulsified MCT oil - the ever elusive nectar of the coconut gods adds extra healthy fats and a dash of vanilla flavor that blends nicely with the peanut butter. Alex’s take on Mocha Chip:

-       1 cup of Hemp Milk (added to mixture and left overnight)

-       2 TBS of Crunchy Peanut Butter

-       1 TBS of Onnit Emulsified MCT oil


Ryan’s Toppings – Apple Spice

Whether on the cutting edge of questionable hair styles or being known in high school basketball not for skill but for the coolest(?) shoes around, Ryan’s knack for flare carries into all walks of his life. You’ll find some of that flare in Ryan’s take on the Apple Spice:

-       1 heaping cup (he’s not a chef) of Almond Milk

-       2-3 TBSP of Coconut Cream

-       2 TBS Almond Butter (no specific brand allegiance, he just avoids the ones made with extra oils added)

-       1/4th cup of Trader Joe’s Almond Butter Granola or other low sugar granola
